One of the most amazing organisms that thrives on this green earth of ours is known as yeast, a eukaryotic microorganism that belongs to the fungus kingdom.

This organism is one of the most resilient and adaptive creatures known to man.

It just so happens that if you plop it into a room temperature vat of malt, wheat, barley and/or hops, it starts to eat it and produce carbon dioxide. If you seal that vat, cutting off the supply of oxygen, it won’t mind much. It will still produce CO2, but in the newly anaerobic environment, it will start to produce a different compound known as ethanol. We humans have another word for ethanol: booze.
